John Coffey opened Thyme Restaurant in November 2007 with the aim of showcasing as many of the fabulous producers located in the midlands as possible on his menus. This rings through today in his cooking with the Bridgestone Guide stating- "As well as conjuring great tastes and textures with his cooking in Thyme, chef-proprietor John Coffey is one of the very best at capturing and expressing the symbiotic relationship between producer and chef. His menu includes a veritable Who's Who of Midlands artisan alumni, and those artisans are fortunate to have Mr Coffey to create culinary odes to their hard work." Thyme has gone from strength to strength over the years garnering critical acclaim and numerous national awards.
